Better Than Coffee Shop Scones

Have you ever wanted to make the type of scones found in most coffee shops? You know the ones, you can not resist and are willing to overpay for all the time! I have the recipe for you and with very little experience you too can make coffee shop and bakery quality scones in less than 30 minutes, start to finish.

The first time I ever had a scone I was hooked! The first time I tried to make scones I was shocked at how easy it was. If you are nervous about making scones you can always start with the “drop” version and work your way up to the triangle scone “coffee shop” type.

  • A medium sized bowl with electric beaters or Stand Mixer and bowl
  •  A clean tea towel
  • Spatula
  • Two spoons (if doing the drop method)
  • Knife
  • Cutting board
  • Parchment paper (available at any cook shop and most grocery stores)
  • A grater (if adding cheese that is not yet grated)

recipes for making scones How To Make Cheese Scones

  • 1 cup of white flour
  • 1 cup whole wheat flour (if you do not have you can just use more white flour)
  • 1/4 cup of sugar
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup of Lard (or margarine or butter)
  • 1 cup of grated cheese ( you can use as much as you want more is always nice!)
  • 1 egg
  • 2/3 cup of milk

Preheat your oven to 425 degrees.

Combine the flour, sugar, baking powder and salt. Cut the lard into small chunks and add to the flour mixture then combine. Add cheese and egg and milk. When the mixture forms a sticky ball choose if you are going to spoon on to a cookie sheet as “Drop Scones” or if you are going to cut triangles. If you are doing the triangles, flatten the ball and slice as you would pizza and place on a cookie sheet brush tops of the triangles and bake.  If you are making the triangle scones brush the tops with a little bit more milk before baking.

I bake mine until they are golden brown about 15 minutes but you may need to adjust the time with your own ovens, I like mine a bit overdone. The secret ingredient in my scones is lard but YOU CAN USE MARGARINE OR BUTTER, but I tell you if you use the LARD you will notice a difference.

How To  Make Apple Cinnamon Scones

  • 3 cups of all purpose flour
  • 2/3 cup of brown sugar
  • 1/3 cup of white sugar
  • 1/2 cup of apple sauce or other fruit puree
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 egg
  • 4 tsp’s of baking powder
  • 1/3 cup of milk
  • 1/2 cup of shortening ( I use lard really I do) or margarine
  • 1 grated apple or chopped small

In a bowl place the flour, sugars, baking powder, cinnamon and apple. Mix. Add your shortening and mix until it is like bread crumbs. Add egg, milk, apple sauce and vanilla mix, mixture should be thick and wet. Scoop spoonfuls on to a cookie sheet in your desired size. Bake until golden brown. About 12-15 minutes at 400F

While the scones are baking make your icing.

Icing Recipe

  • 1/2 cup of margarine or shortening
  • 3 cups of icing sugar
  • 1 tsp vanilla
  • 2-3 tsp of milk

Mix all the above ingredient together if you like a thinner icing add more milk to the mixture.

Once the scones have been removed from the oven place a dollop of icing on top of each scone.

Cinnamon Topping recipe

  • 1 tsp of cinnamon
  • 2 tbsp of brown sugar
  • 1 tbsp of white sugar

Mix together and sprinkle over the icing topped scones.
