Easy Paleo Un-Egg Roll Bowls

It’s time for a diet reset. This spring I did so well, eliminating sugar, dairy and grains from my diet and as a result I lost 30 lbs and felt AMAZING. Enter summer – sending a child off to college, a job change, summer swim season and you get the picture – off the wagon completely! I woke up this morning with achey joints and feeling bloated and decided it is time to reboot my diet.

One thing I learned this spring, is that you don’t have to give up your favorite comfort foods when you start eating paleo, but you do have to look at those comfort foods differently and get creative. While putting together my meal plan this morning I came across this recipe for Sausage Egg Rolls in a Bowl from Buns in my Oven. Not only did this look amazing, I only needed to buy TWO ingredients at the grocery store. SCORE!!

So basically this is my new favorite dinner and I can’t wait to eat the leftovers for lunch the next two days. Sausage, slaw mix, garlic, ginger, coconut aminos (instead of gluten containing soy sauce), sesame oil and green onion. Yep, it is that simple and it literally took less than 15 minutes to cook – all in one pan, too.

The secret to success when trying to cut sugar, dairy and grains out of your diet is being prepared. Menu planning, meal prep and having go-to snacks ready are essentials.
