Gardiner Shortbread Recipe
My favorite shortbread cookie recipe is the one my best friend’s Mother has used for years. It is so easy to follow and make and the best part is when I want the cookies I just slice and bake! No more eating the entire tray while I wait for the next to come out. In the time it takes me to make tea I can bake 3 (or 6) shortbread to enjoy with my tea.
Ingredients
- 2 cups of all purpose flour
- 1 tbsp white sugar
- 1/3 cup of icing sugar
- 1 cup of butter at room temperature
Instructions
- Mix all the above ingredients in a stand mixer and cover it with a tea towel to prevent the flour from covering the kitchen. (You can use a bowl and beaters if you would like also.)
- When the ingredients are combined, transfer half the mixture on to a 9X13 piece of parchment paper or wax paper and roll it into a log.
- Wrap it tightly in the parchment paper folding then ends in and place it in the fridge to chill.
- Repeat the steps with the remaining ingredients.
- When the log has chilled slice the cookies and place them on a cookie sheet. Top them with a cherry or a pecan.
- Bake at 350 for 6-8 minutes.
