The King Arthur Flour company has got Gluten Free figured out!! I made a batch of Chocolate Almond Cookies using the King Arthur Gluten Free Cookie Mix and added in my own extras and they were delicious! They were soft, had a good feel to them and without anyone really knowing they were gluten free, they disappeared off the plate at the Thanksgiving dessert table.
What you need to make Gluten Free Chocolate Almond Cookies:
- 1 Box King Arthur Gluten Free Cookie Mix (I buy it online at Abe’s Market)
- 1 tsp almond or vanilla extract
- 1 bag of Hershey’s Kisses with almonds (ground up to chunky consistency in food processor)
I just followed the instructions on the back of the box and was very happy with how they turned out. The King Arthur Gluten Free Cookie Mix is the perfect base for just about any cookie you can dream up and should definitely be on your must have baking list as you enter the holidays and Christmas cookie swap season. I am going to try making white chocolate and cranberry cookies with cream cheese frosting with the King Arthur GF cookie base next in an effort to replace one of my non-GF favorites – Starbucks Cranberry Bliss Bars.
Abe’s Market carries all the King Arthur Flour Gluten Free products and with their Black Friday sale of 25% off everything, it is much less expensive to stock up through Abe’s than to pick up the mixes at my local store.
