Menu Plan Monday – April 20

Spring Break is over and it is back to the reality of balancing school, sports and social time! With a little planning the kids will get plenty of healthy fuel this week despite the fact that we are going full speed all week. One of the things I did this week was to cook extra chicken breasts on the grill for dinner last night. I now have quick protein for meals and even snacks.
- Monday – Turkey and cheese subs or wraps and veggies ‘n dip
- Tuesday – We will most likely get dinner out – in between sports practices (swim for the girls then ice hockey for my son)
- Wednesday – Shredded chicken enchiladas, rice, beans
- Thursday – Italian sausage, onions and peppers in the slow cooker. Kids can serve over rice or on sub rolls.
- Friday – Birthday party for my niece – it will be gluten free and fabulous – just check out her mom’s site (Celiac Family) and you’ll know why!
