Menu Plan Monday - July 14

Another week of summer has flown by and even though we are staying pretty close to home this summer, we are staying very busy.
Saturday morning I took everything out of the pantry and gave it a good clean out and reorganization. Much to my surprise - there was a lot more food in there than I had realized (read: I forgot what we had) and I got some meal inspirations along the way. The kids also have plans of having friends over most days this week so I am trying to keep my menu kid-friendly and easily adjustable for the number of servings it has to make.
Here is the plan for this week:
- Monday - Steak and cheese sandwiches on hoagie rolls, vegetable and pasta salad with light Italian dressing
- Tuesday - Chipotle chicken taco salad
- Wednesday - daughter’s swim meet - chances are we will eat something from concessions (usually pizza or similar)
- Thursday - One pan pasta and meatballs
- Friday - Apple & cheddar quesadillas or Pizza quesadellas

I followed your link for the Chipotle Chicken Taco Salad and was pleasantly surprised to find that they had 7 different salads that are 300 calories (I’m assuming per serving). I really like salads! I saved the link for future reference.
