Menu Plan Monday – Kicking Off Summer Vacation

Today is the first official week of summer for the kids. That means a new routine, new working hours for me, and more evenings at home – in theory! It also means I want lighter food, quicker clean ups and more creativity.

One of the things I was really happy to present my kids with this morning was their summer chore chart for this week. We are trying the allowance tied to the chores thing this summer – we’ll see how that works. Anyhow, I posted the customizable chart on one of my other sites, but you can get it here, too:

And now for this week’s menu:

  • Monday – We’ve had a big request for tacos again this week (this is a family favorite for some reason). I am going to make mine lighter by eating it more as a salad.
  • TuesdayCurry chicken salad sandwiches and veggies & dip. I will probably cook a few extra plain chicken breasts for a picky child or two.
  • Wednesday – Swim meet night so I will pack a picnic lunch of peanut butter and jelly sandwiches, veggies, fruit, a few cookies and plenty of water and gatorade.
  • ThursdayPasta Carbonara – I have never tried this with the kids, but I think they may actually like it – it is one of my childhood favorites. Add tossed salad, too.
  • Friday – out of town. The girls and I are going to go watch the Olympic Trials for Gymnastics – how cool is that?
