Menu Plan Monday – May 12

Gluten Free Herbed Green Bean and Potato Salad

I hope everyone was totally spoiled on Mother’s Day!! I cooked for my Mom and the whole family and boy, was it yummy. We had Italian Sausage, peppers and onions, Herbed Potato and Green Bean Salad (it is Gluten Free and Dairy Free), Baked Beans, and Macaroni Salad. The Potato Salad was so delicious!

This week’s menu is going to focus on healthy and fresh meals.

  • Monday - Hamburgers on the grill, steak fries, tossed salad
  • Tuesday – Taco Pizza
  • WednesdayPeanutty Stir-fry Salad
  • Thursday – Breakfast for dinner. Scrambled eggs, hash browns, fruit salad
  • Friday – my daughter’s and I are traveling to a gymnastics competition. Dinner for us will be healthy-ish take out. I’ll make baked macaroni and cheese for the boys to heat up.
