Menu Plan Monday – October 29

Menu Plan Monday

Laura the Organizing Junkie is the inspiration and weekly gatherer of the Menu Plan Monday series. She launched her new blog home and design this weekend and it looks great!! For more Menu Plan Monday ideas or to get in on the fun, make sure you go to her new site from now on – www.orgjunkie.com.

Menu Planning has become my #1 sanity saver when it comes to running a busy house of 5 (hiring a cleaning service to come in twice a month is my #2 tip). If you haven’t tried it yet, you really should. You would be amazed at the time and money you save, plus your family will eat so much healthier for it.

My week:

  • Monday – Due to scheduling and appointments, we will get an early dinner out and then follow up with a healthy snack once we get home. Some days you just have to do this…
  • Tuesday - Homemade Chicken Fried Rice – we got Chinese over the weekend and have a ton of white rice leftover.
  • Wednesday – Make your own English Muffin Pizzas (split English muffins, top with sauce, cheese, pepperoni or other favorites then put under broiler until toppings melted) and veggies and dip before we go Trick or Treating (where ever that may be)
  • Thursday – Pulled pork BBQ sandwiches (slow cooker) and coleslaw and applesauce
  • Friday - Hockey game and then open skate with friends – Submarine sandwiches from the deli next door to the rink

If I hadn’t planned this out, I could have easily found myself going through the drive through 4 out of 5 nights this week due to activities. Even though we are having to eat out twice this week, I have been able to plan for it and choose the healthiest option ahead of time.
