Menu Plan Monday September 17

Compared to this last week, this week is looking almost boring! Yes, we have lots of activities after school and all, but I don’t feel like I have to be in two places at once all week long.

Back in May, I decided it was time to listen to my own body more and after years and years of just fighting weight gain, always feeling tired, and just not feeling good, I decided to try cutting gluten out of my own diet. There is Celiac in the family and while I have certainly not been diagnosed, I wanted to see if removing it from my diet would help. Well it has!! Not only do I feel really good, but I don’t miss the gluten and the weight is starting to come off. Twelve pounds so far. I can’t seem to get my family on board with it yet, although they no longer question my decision, but I am trying to make substitutions in their diets without them realizing it. 

So this week’s menu looks like:

Menu Plan Monday

Monday – Grilled chicken, baked fries and steamed veggies (gluten free and the family doesn’t even realize it!).

Tuesday – Pork chops in the slow cooker with Sweet Baby Ray’s BBQ sauce, coleslaw, baked beans & corn on the cob (again, gluten free and the family doesn’t even realize it!).

Wednesday – Our middle child has a birthday next week, but next week is going to be nuts, so we may surprise her with an early birthday dinner as a family.

Thursday – Soup of choice (I will have Thai rice noodle soup – yum) and BLT with crab meat sandwiches (I just omit the bread).

Friday – Both of the older kids have to be at the High School for Football game activities, so we will all go and support the Band by eating there.
