Simple Summer Squash Saute
Ahhhh! What you see is a little piece of summer heaven! My absolute favorite summer vegetable combination is yellow squash, zucchini squash and onion. The absolute easiest way to prepare them is this simple saute.
- Slice the onion as coarse as you would like, then slice the yellow squash and zucchini.
- Pour a little olive oil in the bottom of a pan, heat it up and toss in the veggies.
- Stir the veggies constantly as they cook and begin to soften.
- Season with some sea salt and pepper then serve.
I have also made this using a little Italian Dressing for extra flavor and have also used a garlicky olive oil. Honestly, the simple version is the one my family prefers.
If you have other summer vegetables such as mushroom, tomato, spinach or really any veggie your family likes, toss them in and enjoy! Experiment with seasonings and vegetable combinations, too.
